I am happy for the humble sprout.


Once maligned and detested. Now sprouts are sexy. Yeah. Sexy


It’s all about jazzing them up. And not boiling them for eight hours.


500gr sprouts, trimmed on the bottom and cut in half
60gr fresh cranberries
80gr chopped pancetta
1tbsp olive oil
75gr to 100gr blue Stilton


1, Preheat your oven to 190o/c. Put the prepared sprouts in a casserole dish. Spread the cranberries over the top and then follow that by spreading the pancetta over too.
2, Drizzle over the oil, put on the lid and bake for 15 minutes.
3, After 15 minutes, take the lid off, stir gently and return back to the oven for 10 minutes until the pancetta and sprouts start to get caramelised.
4, Remove from the oven and crumble over the Stilton.
